Buying Guide To Pork
When many people think of pork they immediately think bacon and sausages. Delicious though these can be, there is more to the meat than that, with a delicious cut to suit every occasion.
There is a range of pork recipes out there which call for cuts unfamiliar to many people. This buying guide will help you navigate the myriad choices available at your local butchers.
Pork Shoulder
Large and versatile, a plethora of different pork recipes are based around meat from the shoulder. From classic roast pork to stews, curries and casseroles, shoulder pork can be used in them all with delicious results.
Good butchers will, with speed and precision, turn the shoulder into steaks, cubes for use in stews or casseroles, mincing meat and roast pork joints.
Loin Pork
The pork loin is traditionally the preserve of chops but modern butchering has led to a number of new and exciting pork cuts. The pork loin will produce a host of different pork cuts - from roast pork joints to chops, steaks, pork fillet and love spare ribs for the barbeque.
Favourite pork recipes using this cut of meat include stir fries, roasts and barbeques.
Pork Belly
In recent years, it seems like there is not a restaurant or fashionable gastro pub in the country which has not added slow roast pork belly to the menu. Once a lesser used and undervalued cut, belly pork has now become very popular, and not without reason.
Butchers produce spare ribs, belly slices and beautiful roasting joints from the belly.
Leg of Pork
Due to the bones, it is necessary for the butcher to put a great deal of effort into preparing the familiar pork leg cuts. From a single pork leg the butcher is able to produce a host of roast pork joints, steaks and meat for stir fries, casseroles or stews.
From roast pork to ham to goulash to casseroles, there is a wide range of tasty recipes that have pork leg cuts at their hearts.
Offal
As increasing numbers of tv chefs turn to offal - kidney, cheek, liver, trotters and so on - it is becoming more widely used on the doomestic market.
Moreover, in tough economic times they can be a highly economical and entirely delicious way to feed the family.
Of course, the key to any of these cuts is using good quality meat so be sure to look out for the red tractor seal of approval.
